French Toast with Smoked Salmon

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 2 cloves garlic, grated, divided ½ cup crème fraîche or sour cream 1 tablespoon capers, rinsed 1 tablespoon chopped fresh dill, plus more for garnish 1 tablespoon lemon juice ½ teaspoon ground pepper, divided 6 large eggs, divided ½ cup whole milk ½ teaspoon dry mustard 4 (1/2 inch thick) slices crusty whole-wheat bread (about 8 ounces) 2 tablespoons extra-virgin olive oil 4 ounces sliced smoked salmon Thinly sliced red onion for garnish
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀 1. Preheat the oven to 250 degrees F. 2. Combine half the garlic, crème fraîche (or sour cream), capers, dill, lemon juice and 1/4 teaspoon pepper in a small bowl. Set aside. 3. Whisk 2 eggs, milk and dry mustard with the remaining garlic and 1/4 teaspoon pepper in a shallow dish. 4. Place 2 slices of bread in the custard and let sit for 30 seconds, flipping once halfway to coat evenly.
5. Heat 1 tablespoon of oil in a large nonstick or cast-iron skillet over medium-high heat.
6. Add the soaked bread and cook, flipping once, until lightly browned and crispy, 1 to 2 minutes per side.
7. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining 1 tablespoon oil and 2 slices of bread. 8. Meanwhile, poach or fry the remaining 4 eggs as desired. 9. Top the French toast with smoked salmon, the cooked eggs and the reserved sauce.
